BALNEA’s Summer of Chefs is back for another flavourful summer
If you’ve never been to Balnea, do yourself a favour and book a spa day immediately. Seriously, do it now, I’ll wait... Now that that’s taken care of, let’s move on! The Spa is spectacularly located in Bromont-sur- le-Lac and snuggled between two mountains, is the perfect spot to relax and rejuvenate, and indulge in the gourmet creations of some of the Quebec’s most promising chefs as part of the 7th edition of Été des Chefs.
The Summer of Chefs officially kicks off on July 3rd. The Spa will welcome 10 amazing Chefs who will treat guests to their unique, mouth-watering creations every Sunday until September 10th. Among the talented chefs are Jonathan Rassi from Les 400 Coups, Matthieu Masson-Duceppe from Jellyfish crudo+charbon, David Pellizzari from Lili.co, Jean-Baptiste Marchand from Chambre à part, Charles-Emmanuel Pariseau from O’Chevreuil, François Blais from Bistro B, Francis Lorrain from Le Boating Club, Olivier Vigneault from Jatoba, Julien Robillard from XO and Grégory Paul from Mile-Ex. If you can’t make your way to Balnea, you’ll still be able to indulge since each chef’s dish will appear on their restaurant menu all summer long.
Each chef’s creation was absolutely delicious, but I found my favourite in Chef Olivier Vigneault’s (Jatoba) spicy crunchy tobbiko yuzu tartare, served with sustainable red bluefin tuna, nori powder and micro coriander sashimi, min bitter peach, Asian pear salsa and green shallots. So fresh, so flavourful, so perfect.
My second favourite came from the kitchen of Lili.co’s chef David Pellizari. Grilled pompano, broad bean puree, labneh nasturtiums, fresh almonds and an Aleppo pepper carrot sauce. Divine!
Third on my list was a delicious surprise by Chef Matthieu Masson-Duceppe from Jellyfish crudo+charbon. Charred heirloom carrots served over ricotta, honey, bread and homemade duck prosciutto. It’s a lesson on how to turn simple carrots into a mouthwatering treat.
